Oil – Oleum Mançanella

We located these olive trees in the south of the province of Valencia and the north of the province of Alicante. This variety has a high oil content. Its composition is notable for its acceptable resistance to oxidation, thanks to its oleic acid content and polyphenol percentage.

Its aroma will highlight green stone fruits and others such as apple, tomato and aromatic herbs typical of the territory of the Mariola and Benicadell mountain ranges.

On the palate, one perceives fruity notes, almond bitterness, a compound of mountain herbs, and a medium-low astringency, leaving a persistent and pleasant spiciness.

Excellent for dressing all kinds of salads, accompanied by Granny Smith apples and nuts.
